Healthy Gluten-free Breakfasts

Hello!  And today I’m going to share some of my favorite breakfasts.  I actually only have three, considering breakfast should be fast and easy, so the three I will present should take like, no time at all.  Plus, they taste good and are healthy! (Unless you’re lactose intolerant, and then you should probably leave this post with my sympathy.  I’m sorry you’re missing out on the best thing in life! 😭)

So, before I begin I want to impress on you HOW IMPORTANT IT IS TO EAT BREAKFAST!  It ruins your car to drive it on an empty gas tank, and it ruins your life to begin a day without proper nutrition.  (Now I sound like a proper dietitian.  Must run in the family.)  I used to hate eating breakfast because I just. Wasn’t. Hungry.  But y’all, MAKE YOURSELF EAT.  If you make it a habit, you’ll want to eat breakfast.  I promise.  *nods wisely* Now, on to the post!

Yogurt Parfait

So, I have here greek yogurt, pecans, blueberries, a spoon, and a bowl.  You can use whatever kind of nuts you want, I just prefer pecans.  (My sister always uses walnuts, but to me, walnuts are just the cheap imitation of a pecan.) I prefer strawberries in my parfait, but strawberry season is kinda…over.  I know, it’s sad.

So, sometimes I do toast my pecans, but it’s just easier to not toast them.  It’s up to you if you want that crunch like real granola, or you just want to be fast and easy.

You will need to chop the nuts.  Some of my siblings just crack them in their hands, but that doesn’t make them come out all even.  (I’m picky.) Cut them up to how small you want them.  I like okay sized chunks, ’cause the smaller they are, the more they stick in my braces.

You will scoop up the pecans, and learn lesson number 1 in Amie’s kitchen.

Clean up as you go.

(Hehe, I just stole that from my mother.  <3) Anyway, it’s a lot easier if you clean up that mess on the cutting board now, instead of waiting until you’ve eaten that yogurt parfait and you have the excuse of digestion not to do it.

After you put the pecans in the bowl, put the blueberries in the bowl.

Not sure how many blueberries to put in?  Here’s rule number 2 in Amie’s kitchen.

Never use measuring cups…Unless you’re having company.

So, just grab a hand full.  Your stomach is supposedly the size of your fist, so a fist full of blueberries should work.

Next, it’s time for yogurt.

Again, I have no idea how much yogurt you should put in, just guess.  I like TONS AND TONS of yogurt, while my siblings prefer less yogurt.  To me, the more sour, the better.  If you end here, you’re done!  Now, you can add honey to make it taste a lot sweeter, but I hate honey and sweet things, so this is my breakfast a lot of the time.

So, there’s breakfast number uno!

Fried Eggs

Eggs are a huge source of cheap protein, so guess what my family eats a lot of?  I’m super picky, and I’ll only eat eggs fried or in Quiche, so fried eggs it is!

So, you will need eggs, butter, a pan, and spatula, and whatever else you like with eggs.  avocados are delicious with eggs, but I usually eat mine with spicy brown mustard.  We sometimes have gluten-free bread, but it was frozen this morning.

Okay, some people say that it isn’t good to grease a pan with butter.  *stares at you* Well, vegetable oil usually contains soy, and we’re soy free.  Canola oil is bad for you, and then have you ever heard someone greasing a pan with olive oil?  And please, try coconut oil if you want to dread breakfast every morning.  I’m staying with my butter, thank you.

So, plop the butter on there and spread it around.  Take my advice, add more than that if you don’t want your eggs sticking to the pan.  (Hehehe.)

Now, crack the eggs into the pan and wash your hands.  Apparently eggs have E-coli *laughs maliciously* and other germs spread by birds.  If you aren’t into washing your hands, that’s okay, too.  I’ve cracked eggs and not washed my hands, and I’m still breathing.  (Maybe that’s what’s wrong with me…)

When you feel extremely bored and tired of standing at the stove, flip your eggs.

*Cough* But do not flip them like me.  (See??? I needed more butter.) Um, I think this was a dreadful fail.  I’ll never be hired as cookbook photographer.  So, try not to crack the yolk.  (Again, FAIL.) Now, guess if it’s been on the stove long enough, and pull it off.

Fix them up and yep!

Gluten-free Pancakes

So, I’m actually more confident about my pancake skills than my egg making skills.  I’m probably most confident about cooking bacon, though.  I love cooking bacon.  Anyway, this isn’t about bacon, it’s about gluten-free, paleo pancakes!

You’ll need Birch Benders paleo pancake mix, which you can find here on Amazon.  You’ll also need water and a banana, and not pictured is a pan and spatula.  You’ll probably need those too.

Okay, you’ll start with the mix and the banana.

Combine the ripe banana and the mix, and then pour the water in there.  Mix it up well, and turn on the stove.

I have no clue what the right way to go about this is, but my advice is just dump a few spoonfuls on the pan, and go check your email.  It’ll take a while.  (Of course, my mom says never to leave a  stove that is on…SO, perhaps you should check your email on your tablet.)

Hehe, the pancakes I made later looked a lot better after I flipped them.  Anyway, some people have told me that you shouldn’t flip them until you see little bubbles.  I don’t know about that, I just wait until they get the right amount of firmness.  On our gas stove, it’s best to put the neat on medium low, so it doesn’t burn them while it cooks them.

And you’re done!  Delicious, and not so nutritious.  I think second breakfast is already calling.   😉

    Thanks so much for these healthy breakfast recipes! I will definitely try them. Only problem is I’m allergic to eggs so that 2nd one will be out for me!

    This was fun to read! I am gluten, diary and sugar free and love finding new breakfasts that are healthy and safe to eat! My favorite is definitely a fried egg or overnight oats. 🙂 My current favorite is a smoothie!

    I totally agree with you! My family is gluten, soy,and GMO free – so we have tried all three of your suggestions! Except I HAVE.TO.HAVE.MY.EGGS.FULLY.COOKED. I’m sorry, but eggs look so much more appetizing (well, to me at least.) if they are scrambled. But we have tried the pancake mix! And I love yogurt parfaits, but I love smoothies best. XD Loved this! (And I’m a terrible cook, so I have to make something easy. Or not at all…..just leave it up to the cook of my family – Avery.) And my mom says the same thing about not leaving the stove! And yet…..I *ahem* forget sometimes. Forgetting = burnt food. ): XD

    Ahh, these are great breakfasts! We like to layer our parfaits in clear glasses and then drizzle honey on top. *licks lips* Also my brother likes to eat scrambled eggs with ham for breakfast. XD Ha ha, that’s great – my aunt has the SAME paleo pancake mix (two of my cousins are gluten, dairy, and semi-egg free)! And WE have the exact same Costco maple syrup! XD Great post, Amie!

    I like pecans more than walnuts too. They are my favorite nut!
    That is a rule in my kitchen to, XD. Clean up as you go. It is a lot easier that way. And I never measure things like that either. I just put to taste.
    I only like to grease my pan with butter when I’m making eggs, but we use olive oil for broccoli or Brussels sprouts.
    Hehehe, I’m always told not to leave a stove that is on, too… But sometimes I still forget… 😉
    And I think my favorite breakfast is French toast.

    Yess, breakfast! Those eggs actually look delicious, by the way. I’m keto, which means really low-carb (no bread, milk, sweets, that sort of thing) but these all look pretty low-carb anyway. Great post!
